Ingrediente principale di questa ricetta è il pomodoro utilizzato come ortaggio da contorno: in realtà dal punto di vista botanico è un frutto. È ricco di un prezioso carotenoide chiamato licopene molto studiato nell’ambito della prevenzione di svariate patologie. Il pomodoro è anche collegato ad una riduzione del colesterolo totale. La presenza dell’olio in questa ricetta è ottimale e favorisce l’assorbimento del licopene che è un composto lipofilo. Il contenuto di licopene è ancora più elevato nel succo (9 g / 100g), nella salsa (15 g / 100g) e nel concentrato di pomodoro (circa 30 g / 100g), rispetto al frutto (100 g contengono in media 3 mg di licopene). Lavorazione e cottura inoltre migliorano l’assunzione di licopene, che è massima per i pomodori cotti in olio, per esempio sotto forma di sugo. I lipidi dell’olio, infatti, facilitano l’assorbimento del licopene (sostanza lipofila) e proteggono il licopene dalla degradazione in cottura.
Abbinati ad una porzione di pane tostato gli ingredienti di questa ricetta possono comporre una gustosa bruschetta da servire come antipasto prima di un secondo a base di carne o pesce accompagnato da verdure oppure, in alternativa, possono accompagnare una fresca mozzarella in una calda giornata d’estate.
