Questa originale insalata vede come protagonisti i fagiolini e i ceci, entrambi classificati come legumi, sebbene le caratteristiche nutrizionali dei primi li rendano molto più simili al gruppo delle verdure. La loro presenza, insieme a quella del pane integrale e dei pomodorini semi essiccati, rende questo piatto una valida fonte di fibra, composto importante per la salute del nostro intestino. I pomodorini semi essiccati, inoltre, regalano anche il licopene, una molecola studiata per i suoi effetti protettivi per la salute. L’aggiunta di grassi, in questo caso l’olio extravergine di oliva, ne aumenta la biodisponibilità.
Un piatto velocissimo da preparare che può esser utilizzato sia come antipasto che come contorno. Attenzione alla cottura dei fagiolini!
