In questa ricetta ritroviamo un’antica pasta tipica delle regioni centrali del nostro paese, accompagnata da asparagi e ceci. Entrambi donano al piatto una buona quota di fibra, presente anche nelle farine integrali utilizzate per realizzare gli strozzapreti, il cui ruolo preventivo nei confronti delle patologie più diffuse nei paesi occidentali (tra cui diabete, malattie cardiovascolari, ipercolesterolemia e tumore al colon) è ben documentato. Gli asparagi, inoltre, si caratterizzano per il loro contenuto di vitamine e minerali, in particolare una porzione soddisfa quasi tutto il fabbisogno di acido folico e più della metà di quello di vitamina K. La presenza delle noci, infine, contribuisce ad arricchire il piatto di gusto e nutrienti, in particolare sotto forma di grassi “buoni”.
In questa ricetta la cottura degli asparagi al vapore è decisamente smart. Questo metodo, infatti, consente di limitare un’eccessiva perdita di nutrienti, in diverse tipologie di verdure.
Per concludere il pasto basterà abbinare a questa ricetta una porzione di verdure come contorno e una piccola porzione di alimenti fonte di proteine. Ad esempio, si può preparare un’insalata di pomodori e qualche mozzarellina, nel periodo estivo, mentre per le stagioni più fredde si può optare per una di radicchio rosso e cubetti di feta. Infine, concludere con il frutto di stagione preferito.
