In questo gustoso antipasto vengono proposti dei crostini con salmone, accompagnati da misticanza e caprino fresco. In questo caso il salmone viene utilizzato fresco e crudo (previo abbattimento), preferibile rispetto alla versione affumicata, per il ridotto contenuto di sale. Oltre ad essere una prelibatezza per il palato, il salmone presenta un elevato contenuto di proteine ad alto valore biologico e di acidi grassi omega-3, un vero toccasana per la salute delle arterie e dell’apparato circolatorio.
Come accompagnamento al salmone viene proposto il caprino, un formaggio fresco con un limitato contenuto di grassi e di sale, ideale come accompagnamento al salmone, già naturalmente ricco di grassi. La misticanza, misto di erbe tipico della tradizione laziale, infine, apporta fibra, minerali e vitamine. Il tutto viene condito con limone, erba cipollina e zafferano, che conferiscono a questo gustoso antipasto freschezza e sapore, consentendo, inoltre, di ridurre il sale.
Questa ricetta copre tutte le fette che formano il piatto sano, tuttavia le porzioni sono troppo ridotte per poterlo considerare un piatto unico. La misticanza non è sufficiente a coprire la quantità di verdura consigliata, che ricordiamo rappresentare, insieme alla frutta, ben metà del piatto. Per completare il pasto è possibile, ad esempio, abbinarlo ad una zuppa di cereali integrali, legumi e verdura, condita con olio extra vergine di oliva ed arricchita da spezie e aromi a piacere.
Ricordiamo, inoltre, che prima di consumare a crudo qualsiasi tipologia di pesce è sempre bene prevederne l’abbattimento termico, in ambito di ristorazione, oppure il congelamento per almeno 96 ore per il consumo casalingo.
