In questa ricetta troviamo una variante del più popolare pesto ligure. Pomodorini, mandorle e noci rappresentano ingredienti innovativi rispetto alla preparazione classica e l’assenza di parmigiano consente il consumo anche a chi è non vuole utilizzare alimenti di origine animale. Mandorle e noci contribuiscono ad arricchire il piatto di gusto e nutrienti, appartengono alla famiglia della frutta a guscio che apporta energia prevalentemente sotto forma di grassi (buoni).
Questo primo piatto andrà abbinato ad un secondo a piacere con contorno di verdure per completare il pasto. Potrebbe risultare appetitosa l’aggiunta di ricotta al pesto creando una crema (aggiungendo acqua di cottura) per condire la pasta. L’aggiunta di 100 grammi di ricotta rappresenta la porzione individuale consigliata e consente di ottenere un piatto unico. Un antipasto di verdure completerà il pranzo o la cena.
