Le sardine, regine di questa ricetta, sono un pesce azzurro dalla carne tenera estremamente versatile, molto diffuse nel mar Mediterraneo e nell’Atlantico orientale. Nonostante le loro piccole dimensioni, le sardine godono di eccellenti proprietà nutrizionali, rappresentano un’ottima fonte di proteine e sono ricche di acidi grassi omega-3, utili per la salute cardiovascolare. In questa ricetta vengono proposte su bruschette di pane integrale accompagnate dal finocchio, arricchendo, così, di fibra il piatto. La polpa di pomodoro e il finocchietto, insieme alla marinatura a base di succo d’arancia delle sardine, conferiscono freschezza e gusto al piatto, permettendo di limitare l’impiego di sale.
Questa ricetta rappresenta un gustoso piatto da proporre come antipasto per un pranzo o una cena in famiglia o con gli amici. Per completare il pasto, secondo le linee guida del piatto sano, basterà ad esempio abbinare un’insalatona, composta da lattuga, accompagnata da una piccola porzione di cereali integrali in chicco (come riso, quinoa e grano saraceno) e dal legume preferito.
